The rub that very nearly never was! This was a hard one to balance, but 18 months of tweaking, testing, and support from my good friend Dan Catford (@Urbanstreatery), we finally nailed it.
If you have ever been fortunate to try a good Sri Lankan black curry, such as black pork curry, this dark roasted spice blend will take you right back to flavour heaven!
We lovingly hand-roast the spices over charcoal to add a deep, rich, and intense flavour to this rub. We then blend this amazingly dark curry powder with curry leaves for freshness, Tamarind for sweetness and tanginess, and red chilli for that all important kick.
This rub and seasoning can be used on rich meats and grilled, smoked, or as a base for an exotic and intoxicating, traditional Sri Lankan curry that is simply combined with coconut milk and fresh tomatoe.
